Description
Rovitsa is the fruit of the plant Rovi, known to livestock farmers. In Greece, it has been cultivated since ancient times and is referred to by the name orovos.
Rovitsa is a type of bean. It is green in color and small in size, about the size of a lentil. It is easy to cook because it does not need to be soaked in water first. It is used to prepare both sweet and savory dishes. It has enough iron and protein, which makes it popular in vegetarian diets. It is easy to sprout if soaked and can be consumed in this form. Abroad, it is known as Mung bean.It is widely cultivated in East and Southeast Asia and also in India and is used a lot in their cuisine. In Greece it is not particularly widespread and domestic demand is mainly covered by imports from Australia. However, there are several growers in Kalamata and some in Kalavryta (rovitsa stew is a local specialty).
